SUNDAY the 29th: I called Jan to ask her if she needed a ride to church, but she has not been sleeping well due to the cast on her arm and had a bad headache so she decided to stay home from church today. Church was very good this morning. Pastor Craig and his wife Jenny led the sermon (if you could call it that) together. The topic was LOVE, from 1st Corinthians 13. Their presentation was very good. I picked up a BIBLE IN A YEAR list before leaving church. Betty and Marlene were not in church this morning. Glenda wanted to go home to watch "the game", so I didn't have anyone to go out for lunch with. Which is probably a good thing since I have a LOT of leftovers in my refrigerator. When I got home, I prepared myself lunch and watched a couple of episodes of 24 and started my homework for when we return to LIFE GROUP on January 7th.
MONDAY the 30th. Jan was not free to go to the Y to walk the track so I asked Pam and she was free and we agreed to meet at noon. Before leaving, I made a batch of CHEX MIX to take to Peggy's house for New Years Eve. Pam and I walked the track about forty minutes, maybe a bit less. She told me that she joined the Five Dollars a Month SIP CLUB at Panera's. I suggested we go to Panera's to see how it worked, and that while there, I would join. That worked well and we both are members now and we each had a drink while there. I told Pam that I had a gift certificate for COUSINS CAFE and asked her if she wanted to go there for lunch. She agreed and we met there and we each had soup and a sandwich.
In the evening, Elaine called to tell me that she had contact with Sarah. Sarah fell and broke one of her wrists and was in rehab for two weeks. Elaine had good news from her surgeon today, the biopsy was negative. Also, she was able to reduce the amount of calcium that she takes daily.
NEW YEARS EVE: In the morning, I did some vacuuming and I made the chocolate cream pie and the cornbread for tonight's supper: I used this recipe for the cornbread and I think it is a keeper. The recipe is called: BEST JIFFY CORNBREAD RECIPE. I did not have a whole cup of sour cream so I added some yogurt to it to make a cup. I set the oven for 390. I made a small loaf of cornbread and several muffins so I did not need that much time in the oven. lt really is good!
Ingredients
- 2 large eggs
- 1/3 cup vegetable oil *
- 2/3 cup milk
- 2 Tablespoons honey **
- 1 cup sour cream
- 2 (8.5 ounce) boxes Jiffy Corn Muffin Mix
- Preheat the oven to 400 F (204 C). Lightly grease an 8 x 8 pan with cooking spray.
- In a large mixing bowl whisk the eggs and oil together, then whisk in the milk and honey (make sure to give the honey a good mixing to combine well). Add in the sour cream and mix. Add the Jiffy Corn Muffin Mix into the liquid and stir until just combined, do not overmix.
- Pour the batter into the greased pan and bake for 25 - 30 minutes. Check the cornbread after 25 minutes to see if it is ready by inserting a toothpick into the center. If the toothpick comes out clean it's done, if it comes out a bit wet, put the cornbread back in the oven for the
- remaining 5 minutes.
I called Dee McDonnell, she is spending the winter in Tennessee with one of her daughters. She sounded good and she said everything is going well. It was good to hear her voice. I arrived at David and Peggy;s house at the appointed time: five thirty p.m. and dinner was almost ready. The meal consisted of lobster, shrimp, prime rib (or something similar) and spinach salad. The prime rib was not as good as it was last year. The shrimp and lobster were really good. I provided dessert: chocolate cream pie, some chocolate covered dates from Israel, a new batch of Chex mix and some fruitcake. We watched the movie BONHOEFFER using my Angel Studios account. I enjoyed it just as much the second time. I left around nine twenty p.m. and took the chocolates and fruitcake with me, as well as my can of whipped cream. I left the pie and Chex mix for David and Peggy. When I got home, I tried to reach both Christa and Cassandra by phone, without success.
January first NEW YEARS DAY 2025
I picked Jan up and we went to the Y and we walked the track for about 35 minutes. While there, I updated my membership for the new year. After that, we went to WalMart since we both needed a couple of items. I found some pullover printed tops on sale for five dollars and purchased two of them. I dropped a couple of books off at the library. I relaxed at home the rest of the day. In the evening, I called Christa and this time she answered. We talked for about a half an hour or so.
January 2nd (Thursday). I had my appointment with Dr. Kurbs this morning. It went well. Then I went to the library to pick up a book I had requested. I also read the recent newspapers and found two books to purchase. I decided to go to PANERA to get a free drink. I did that, and then I decided to have lunch there, since they have a special, two items for $8.00. I used the kiosk and ordered this; Turkey & Cheddar Sandwich & Cream of Chicken & Wild Rice Soup it was prepared really quickly. I ate lunch and read one of the books from the library.
Friday January 3rd: I called Niagara County Social Services and I was able to talk to Miss or Mrs. Potter, a supervisor. I explained the problem with my HEAP benefit and she said she would call NYSEG and would get back to me and leave a message if necessary. I went to my dermatologist appointment this morning. Just like the last couple of times, I accidentally drove by it, and had to turn around. I typed the address into my navigation system and drove back about two miles. It is a good thing I left early!! The appointment went well, When I was done, I called Jan and she agreed to be ready for me to pick her up in twenty minutes. She was, and I picked her up and we went to the Y where we walked for a half an hour. We checked out this months craft, which is a six or seven inch snowman. Jan started to sign up, but I told her I am not interested in making one of those and reminded her that she cannot drive. I dropped her off and went to PANERA's for a drink and decided to have lunch there. I had the same thing I had yesterday. They accidentally gave me a WHOLE sandwich rather than the half that comes with the "two fer". I brought half of it home along with a full drink. I spent the rest of the day at home. Miss Potter did not call back.
SATURDAY: I started putting my Christmas decorations away this morning. I thought I would be done by lunch time, but I was not. In the afternoon, after a short nap, I made a batch of COWBOY BEAN SOUP in the the crockpot. I continued working on my decorations. I have three bags (assorted sizes) of stuff to donae and a couple of items to show Peggy, in case she wants to use them for her raffles during the seniors event. I didn't complete putting stuff away until about eight thirty p.m. I still have my three ceramic trees sitting out and will put them away tomorrow or Monday. I think that my Christmas decorations are somewhat better organized than they were. I called Elaine and asked her if she feels well enough to go to the Palace on Monday to see the movie WICKED. She does not think she is ready yet.
I called Elizabeth and invited her to have supper with me since I have a HUGE amount of Cowboy Bean Soup. She said "maybe tomorrow. She had an x-ray a couple of days ago which showed that she has broken her right arm. She will see an orthopedist in Lewiston on Tuesday.
