4/6/20 Aunt Myrtle' Coconut Oat Cookies



  • Ingredients

    • 1 cup butter, softened
    • 1 cup packed brown sugar
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 2-1/3 cups all-purpose flour
    • 1 teaspoon salt
    • 1 teaspoon baking soda
    • 3/4 teaspoon baking powder
    • 2 cups sweetened shredded coconut
    • 1 cup old-fashioned or quick-cooking oats
    • 3/4 cup chopped walnuts, toasted   (I substituted craisins)
      • Preheat oven to 375°. (used 350) In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, salt, baking soda and baking powder; gradually beat into creamed mixture. Stir in coconut, oats and craisins.  On a side note, when I was gathering
        ingredients, I found three cans of baking powder, one expired in 1997, on one I could not find an exp. date and the third had expired but at least it expired in this century.  Two of these went into the trash.
      • Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 8-10 minutes or until light brown. Remove from pans to wire racks to cool.

    I made these today.   Pretty good.  When Peggy dropped off a couple of homemade masks, she picked up 
  • the rest of the choc. chip cookies I made a few days ago.  I watched the movie GOOD WILL
  • HUNTING  (way too much of the F word)
  • I talked to Mary Anne on the phone.  Called Connie and left a voice mail.
  • Vacuumed Carrie's room and the bathroom, gave the br sink and toilet a "lick and a promise".
  • Took a shower and washed my hair.  
  • Walk with Betty, wearing a mask..
