WEEK of SUNDAY April 20th (Resurrection Sunday) through Saturday April 26th, 2025 (new bean/ham soup recipe Tuesday)

 Easter Sunday:  I slept fairly well last night.  While getting ready for church, I put on GAITHER SING-A-LONG 2025 !!!!   And indeed, I did sing along.  When I got to church a full half hour before the ten forty five service was going to start, the parking lot was ALMOST FULL.  There was one empty spot in the front, and in the back was almost full.  I parked in the very last pull out spot in the row.  Church was great!  I sat with Jan, Linda Stein and Marlene whose daughter and a male friend had joined her.  When church was over,  I gave Peggy a ride home and she changed clothes and she and I and David went to ANTONIO's for Easter dinner.  This was our third year doing this.  I treated them because David's eightieth birthday is coming up in eight or nine days.  I ate some cheesecake for desert and took a couple of LACTO pills to help with that.  When we were driving home, we were on Hoover Road when I realized that we would be driving past Carries residence so I said "Let's stop and see Carrie for a few minutes."  We had a short visit with her, which was very nice.  After my afternoon nap, I decided to start going through all of the tourism information that I have collected since moving here.  It was a good day to do it, since the recyclables get picked up tomorrow morning.  I added all the brochures etc. to that bin.  I only kept maps, tour guides and a few other items that I think I might use.  However, there are a lot of doubles, so I have to go through all of those items again.  

MONDAY:  I worked more on putting together all of the photos, newspaper clippings, documents etc. that my Dad saved.  Then I went to the library to drop off a book, to UPS where I purchased a box, and then to Panera where I got a free drink and then to the Y where I had time to walk about 12 minutes before it was time to go to my appointment with Dr. Chubineh.  That appointment went well.  I took a nap when I got home.  Then I retrieved a voice mail from the library telling me that I left a check in the book I returned and would have to return with a photo ID in order to get it.  So, I stopped at the library before going to Peggy and David's house for corned beef supper.  The meal was very good and then David brought out an Easter basket that his daughter Catherine gave him.  So, I ate too many pieces of orange chocolate from PLATTERS (it is so good).  We watched a couple of episodes of TINY HOUSE NATION before I left for home.  I continued watching THE GOOD AMERICAN FAMILY when I got home, and now I am caught up.  I messaged several people on FB private messaging about the talk about the Underground Railroad and the Erie Canal at the Palace on Tuesday evening.  Pam responded that she will meet me there.  Deb said she has other plans, but I have not heard from anyone else.

15 Minute Ham and Bean Soup

 

2 tablespoons olive oil

1 onion diced

1 large carrot peeled and diced

1/2 cup finely chopped celery

4 cloves garlic minced

2 cups shredded cooked ham

6 cups chicken stock or broth

1 tablespoon fresh chopped thyme

3 tablespoons chopped fresh flat-leaf parsley

4 (15 ounce) cans cannellini beans rinsed and drained

1/2 teaspoon black pepper

pinch of salt, if needed

 

In a large pot or saucepan, heat oil over medium-high heat. Add onion, carrots and celery.  This recipe calls for doing the soup on the stovetop, but I will do it in a crockpot.


TUESDAY:  I spent well over an hour packing the huge box of Christa's stuff this morning.  I added a few things she didn't ask for, but I needed to fill the empty spaces.  I took it to UPS and mailed it, SEVENTY FIVE DOLLARS.  I went to Panera and got a free drink and purchased a chicken salad sandwich,  I had half of it for lunch and saved the other half to take to Barker Seniors tomorrow.  I had a short nap after wasting a long time on the phone with PANERA trying to purchase the twenty five percent off for a full year plan.  When I got up I took a quick shower and then headed to the Palace Theatre for the presentation about the Underground Railroad in Niagara County.  I met up with David and Peggy there.  My brother Mike and his stepson, Dominic were there also.  I talked to Dom a little bit about his National Guard service in the prison in Collins.  I think he said he was there 45 days, while the regular prison guards were striking.

The presentation was very good.  As I was leaving, I ran into my friend Ann.  I had sent her the information about this event earlier today and she came, but she had the time wrong and arrived an hour late.  She and I decided to go out for ice cream at JoJo's, so we could catch up.  She told me about her daughter in laws death which occurred a few months ago.  Ann is leaving for two weeks in Florida to visit one of her daughters on the 29th and we will try to get together when she gets back.  


Thursday:  I went to Barker Seniors this morning.  I sat with Karen and Frank.  I had not ordered my lunch, so I packed mine and took it (half of yesterdays sandwich from Panera and some potato salad).  There were two very interesting and helpful speakers.  One is a Medicare specialist and the other works in the SNAP program.  After leaving Barker, I drove over to the Middleport area to the house that David and Peggy used to own.  They had talked about how the ash trees had been destroyed by some bug with the word "borer" in their name.  It didn't look as bad as I thought it would look.  When I got home, I decided to go through my short sleeved tops and get rid of some of them.  Shortly after I started, I got very tired, and I mean VERY tired: I felt awful, so I started my nap early and fell asleep quickly.  I woke up two and a half hours later when I heard Peggy leave.  I had not even known that she arrived.  Anyways, I eliminated maybe a dozen tops and some are in a donation bag and others are in a pile for Peggy to look at, in case she wants some or all of them.  I also emptied out the huge flat basket in my bedroom, and will offer it back to Peg, I think she got it in Haiti.  I worked on putting more jewelry away in my HUGE (junk picked) jewelry box.  I had leftover corned beef, carrots and potatoes (that I brought home from Peg's house) together with the cabbage I cooked yesterday for supper. 


I finished taking pictures out of Christa's albums, what an exhausting job that was.  I tried to reach Christa by phone, but she did not answer.  I am really worried about her, she has been sick A LOT the past few weeks.  She said she has not felt this awful since she was a kid.  


THURSDAY:  First, Jan and I agreed to meet up at the Y in order to walk the track, but since it is so nice outside, I called her and suggested we meet across from Widewaters and walk along the canal and she agreed.  We walked on the cement trail. 

The flowering trees are beautiful this time of year.

It kept getting hotter and hotter.  We saw this scooter, which may have been found after the canal was drained late last fall.  We also saw a bike in a similar condition.  

After we got back to our cars we decided to go to REID'S.  I had a white hot and fries with sauce and a large loganberry drink.  We sat at a table in back.  The prices have definitely gone up, but the serving size of the french fries has increased.

  I couldn't even finish them. When I got home,
I took an early nap because I really needed it.  When I got up and went on facebook, I was reminded of the free shredding event at the Dale Association in two days.  So, I spent a couple of hours going through old bills, receipts and other documentation and boxing stuff up to take on Saturday.  Megan called in the evening to tell me that she ordered a Mothers Day gift for me.  We talked for about a half an hour.  Tyler has finals next week and then will be driving from Alabama to Michigan, with a stop in the Smoky Mountains for some hiking.  Meg will have her cast on her arm for another week.  She still has some pain in her ribs.  


FRIDAY:  First thing today, I went to Panera's and got a free drink, then I went to WalMart to get some Kraft bags, and then I got gas, and then I went to the Y for the FALLS PREVENTION and POSTURE workshops.   They were somewhat disappointing.  Mostly, a physical therapist from out of town talked about the therapies and exercises, etc. that they do at their place.  I think it is in Cheektowaga.  They did show us a few exercises but they did not hand out printouts to take home.  That would have been very helpful.  I went back to Panera's to purchase lunch using my $15 credit before going home.  I took a nap and then worked more on sorting through papers deciding which ones need to be shredded tomorrow morning at the Dale.  A lot of stuff did not need to be shredded, and went into the recyclable container. Late in the evening, Christa messaged me on FB about how much fun she was having "unboxing" the large b0x I recently sent her.  


SATURDAY:   I got up earlier than usual in order to be ready to leave for the Dale Association for the shredding event.  I think I was the first person to arrive.  I had two boxes, one small and one larger and I gave a donation of fifteen dollars.  Shortly after I got home, the crew from GOD'S VOICE arrived with their rakes.  I think it only took them a half an hour to rake both the front and back yards and they filled four Kraft bags.  What a blessing!!!  I packed up two small boxes for Christa, both have some of my glass shoes and a few other glass items.  I continued to work on sorting through and organizing my documents and made some progress.  I put more items into the small plastic three drawer dresser that holds old pictures, newspaper articles etc.  Before taking a nap, I threw some leftovers in my medium crockpot and made a beef broth, and added some barley, to make  a soup.   I found the movie LITTLE MISS SUNSHINE to watch in the evening.  I also watched another movie with John Travolta which was very good, but I don't recall the name.  Near the end of it, Christa started a conversation about all the Jewish people who have been attacking or harassing people, here in the USA.
