MONDAY, December 21, 2020 APPLE AND CHEDDAR YORKSHIRE PUDDING
I puttered around and vacuumed, etc. this morning. Dale Acker, my health insurance agent was late for his noon appointment here at my house. He finally arrived and I signed the papers in less than ten minutes. I dropped my 2020 plan and chose a different one for 2021. As soon as Dale left, I headed out to run various errands.
I took Betty's clean laundry to her and then dropped a book off at the library, and then met up with Peg at FREEDOM CHURCH. I gave her a bag of dairy products and the rest of her fruitcake and the five dollars I owe her, and picked up a couple of items she purchased for me this morning at TOPS. Then I dropped off a bag of clothing that I am donating, and then went to JoJo's and picked up a five pack of ice cream sandwiches and then went to Elaine's house to drop off some newspapers. She gave me some pizelles that she and her sister made.

I started watching the British serial US on facebook. I ate a HUGE lunch.
Tonight was the night that the Bethlehem Star is visible, for an hour following dusk. I went outside and looked, but the sky is very overcast and I did not see anything.
- 3 tbsp vegetable oil approx, or a little more, as needed
- ½ cup all purpose flour 70g plain flour
- ¼ tsp salt
- 1 egg
- ½ cup milk
- ¼ apple peeled, cored and diced into small cubes
- 3 tbsp cheddar finely grated – a nice aged one is best
- Preheat the oven to 400F/200C.
- Generously oil a 6-hole muffin tray and warm it in the oven for a good 15mins (or more) as the oven comes to temperature. Don’t skip this step as they won’t work properly without it.
- Mix together the batter – you can either just mix everything at once, or if you struggle to get a smooth batter, start by mixing the flour and salt then add the egg. Whisk in the egg while adding the milk a little at a time and keep whisking gently until you get a smooth batter.
- Once the muffin tray has heated, pour the batter equally between the 6 muffin moulds. Then drop in a few pieces of apple into each. Top each one with ½tbsp of grated cheddar, slightly spread rather than clumped together if possible. Try to do this all quickly, to save the oil cooling too much. Then put the tray back in the oven and bake for approx 25mins until the Yorkshire puddings are well risen and brown. I had a jar of apple butter with maybe a tbsp of ab in the bottom, so i put a bit in the batter before putting the apple and cheddar in.
- Carefully remove them from the tray and serve. THESE DID NOT RISE, although they did brown. This is how my batch looked. They did NOT pop up!!!
