Christmas Breakfast Ideas
Peggy, David and I are planning on going to MANDARIN in Niagara Falls, NY for Christmas dinner. About a week ago, she asked me for ideas for what to do on CHristmas day, and when I got an email from Mandarin, I got the idea and presented it to her. She asked David and once he found out that Katherine is busy on Christmas Day, he said YES. I must remember to call Mandarin tomorrow and make reservations. They open at three p.m. on holidays.
However, I want to make sure that Becky has someplace to go and/or something to do for Christmas so I am thinking of having a CHRISTMAS BREAKFAST here at my house. I think I have decided on a breakfast casserole and a baked pancake and fresh fruit. I will even make coffee!
CORNED BEEF BREAKFAST CASSEROLE
1 (14-ounce) can HORMEL® MARY KITCHEN® Corned Beef Hash
1 onion, chopped
8 eggs
1¼ cups milk
1 teaspoon whole grain mustard
Pinch cayenne pepper
4 cups ½-inch bread cubes
1½ cups shredded Swiss cheese, divided
Chopped parsley
Directions
Heat oven to 350°F.
In large skillet, cook hash and onion 5 to 7 minutes or until hash is crisp and onion is tender.
In large bowl, beat together eggs, milk, mustard and cayenne pepper. Stir in bread cubes, hash mixture and 1 cup cheese. Spoon into greased 9×9-inch baking dish. Sprinkle top with remaining ½ cup cheese.
Bake 40 to 45 minutes or until golden brown and center is set. Let stand 10 minutes before serving. Sprinkle with parsley. Serves 6.
Corned Beef Hash Breakfast Bake

Preheat oven to 350 degrees.
Lightly grease a one-quart casserole dish.
Spread two cans of corned beef hash in lightly greased casserole dish.
Make six indentations in corned beef hash with spoon.
Break open egg and place raw eggs in each of the indentations.
Sprinkle Tabasco sauce over entire mixture.
Evenly cover mixture with shredded cheese. *8 ounces*
Bake at 350 degrees for approximately 35-40 minutes until egg yolks are fully cooked.
EASY BAKED PANCAKE using Bisquick'
2 cups Bisquick
1 1⁄2 cups milk
1 egg
2 tablespoons oil
1⁄4 cup mini chocolate chip (optional)
Preheat oven to 425 degrees F.
Mix Bisquick, milk, egg and oil. Batter will be lumpy. Stir in chips.
Pour into 15 1/2 x 10 1/2 x 1" pan. Bake for approximately 10 minutes.
Cut into squares and serve with butter and syrup.
