I only had one banana so I made a half a batch, I added a tsp. of brown sugar, extra oats and some raisins
to make these simple three-ingredient muffins, you'll need:
- 2-3 ripe bananas
- 2 eggs
- 1 cup of oats (like Quaker Oats)
- Mash the bananas and mix with eggs.
- Add oats and any desired add-ins (like blueberries or chocolate chips).
- Mix well.
- Pour into a greased waffle iron or muffin tin.
- Cook/bake until done ( timings may vary depending on your waffle iron or oven).
That's it! Enjoy your healthy and yummy muffins.
I made a couple of changes: I added a tbsp of brown Sugar, a half cup of Biquick and raisins.
