I only had one banana so I made a half a batch, I added a tsp. of brown sugar, extra oats and some raisins
to make these simple three-ingredient muffins, you'll need:
- 2-3 ripe bananas
- 2 eggs
- 1 cup of oats (like Quaker Oats)
- Mash the bananas and mix with eggs.
- Add oats and any desired add-ins (like blueberries or chocolate chips).
- Mix well.
- Pour into a greased waffle iron or muffin tin.
- Cook/bake until done ( timings may vary depending on your waffle iron or oven). I forgot to put the temp and time. 4/35 350 degrees for 15 minutes
That's it! Enjoy your healthy and yummy muffins.
I made a couple of changes: I added a tbsp of brown Sugar, a half cup of Biquick and raisins.
Banana Coconut Cookies
Ingredients
2 bananas mashed
2 cup shredded coconut!
Bake at 350 for 12-16 minutes
Cookies gluten-free, and oil-free banana coconut cookies
Optional add can be: chocolate chips, vanilla extract, or peanut butter for a, soft, healthy treat.
MICROWAVE CHOCOLATE BANANA OAT MUG CAKE
Ingredients:
• 1 ripe banana (mashed)
• 3 tbsp rolled oats
• 1 tbsp unsweetened cocoa powder
• 1 egg
• 2 tbsp milk
Microwave for 90 seconds – 2 minutes until set.
